Butternut Squash Soup
This creamy butternut squash soup is comfort with a purpose. Made with simple, whole ingredients, it’s naturally anti-inflammatory and packed with nutrients that support both your body and your mind.
Ingredients
• 1 medium butternut squash, peeled and cubed
• 1 small onion, diced
• 2 garlic cloves, minced
• 1 teaspoon anise seeds or 1 whole star anise
• 1 tablespoon extra virgin olive oil
• 3-4 cups vegetable broth
• ½ teaspoon sea salt
• ¼ teaspoon black pepper
• Pinch of cayenne pepper (optional)
Optional Garnish
• Roasted pumpkin seeds
• Fresh parsley
• Whole star anise
Directions
1. Heat the olive oil in a large pot and sauté the onion until softened.
2. Add the garlic and anise, cooking for another minute until fragrant.
3. Stir in the butternut squash and vegetable broth, then simmer for 20-25 minutes, or until the squash is tender.
4. Blend until smooth and silky, season with salt and pepper, and garnish with pumpkin seeds, parsley, or whole star anise before serving.
